' The vinegar-heavy sponge, the flowers by Kedron stream;

We will bend down and loosen our hair over you,

That it may drop faint perfume, and be heavy with
dew,

Lilies of death-pale hope, roses of passionate dream'

W.B. Yeats

Wildwood Balsamics was founded in the spring of 2012 with our first harvest of elderflowers from our hedgerows in early summer.

Fuschia  blossom followed in August, then  wild heather blossom.

As autumn unfolded, wild blackberries and elderberries came to fruition harvested.

The first  vinegars we produced matured until the following season when we were able to use the 2013 harvest to begin our balsamic process.

We then  launched  Wildwood Balsamics at the ‘ Gifted’  Christmas fair  in Dublin.

Over the last ten years Wildwood Balsamic vinegars and dressings have won five Gold, seven Silver and four Bronze medals with Blas na hEireann.

 The ‘Great Taste’ awards have awarded  three gold stars to our Elderberry and Star Anise.

'Great Taste'  then went on  to achieve a top fifty place that year out of the twelve thousand entries received.

Wildwood Balsamics were then   nominated for a Golden Fork award.

 We were also  given the Guild of Irish

Food Writers award in 2018 .
